Is there a timer or streaks to lose?

No. It's played without rush: undo and hints are free and unlimited, and the game saves itself.

What is wheat for?

Building the village. You earn it by playing (3 cards up = 1 wheat, a win = 10 more) and through challenges; it can also be bought, but you never need to.
